  • For 4 desserts:
  • 20 cl of whipping cream
  • 20 cl of milk
  • 1 vanilla pod
  • 80 g caster sugar
  • 3 sheets of gelatin
  • 2 egg yolks
  • Strawberry sauce :
  • 250 g strawberries
  • 40 g of sugar
  • Decoration:
  • mint leaves
  • 1 bomb of whipped cream


Soak the gelatin sheets in cold water. In a bowl, mix the sugar and the egg yolks. Add the heated milk, then pour into a saucepan with the vanilla bean split in half. Cook over low heat, mixing until thick, then pour into a bowl. Mix with the drained gelatin and leave to cool. Beat the whipped cream very cold in chantilly and mix it with the previous preparation. Fill this cream with a salad bowl or individual glasses, at three quarters of their height. Allow 3 hours in the refrigerator. Wash the strawberries and then mash them and mix them with the sugar. Pour into a bowl, cover with a film and store 1 hour in the refrigerator. When serving, top Bavarian with coulis, decorate with whipped cream and mint leaves.
